Ι absolutely adore salads, but I rarely enjoy a good salad outside my kitchen. They are either too dry, or have too much dressing, or are not well balanced. As always, simple things are the most difficult to get right. Actually, the most difficult part about making a salad is to wash all the greens properly and then dry them. For that I use a very nice salad spinner, because water in my salad is a big non-no.
This salad is a personal favourite. The secret is to use different kinds of letuce and/or mix them with something bitter. Use whatever you find fresh amd is in season.
Tip: Slice the mushrooms and avocado at the last minute because they discolour quickly.

Οι σαλάτες είναι μεγάλη μου αδυναμία, αλλά σπάνια τις ευχαριστιέμαι έξω από την κουζίνα μου. Είτε έχουν πολύ σάλτσα, είτε λίγη, είτε είναι βαρετές. Βλέπετε, τα απλά πράγματα είναι και δύσκολα: τα υλικά πρέπει να είναι φρέσκα, οι ισορροπίες εύκολα ανατρέπονται.
Βασικά το δυσκολότερο σε μια σαλάτα είνα το καλό πλύσιμο και στέγνωμα των φύλλων της. Για το σκοπό αυτό χρησιμοποιώ ένα στραγγιστήρι που λειτουργεί με φυγόκεντρο ( θα το βρείτε σε σουπερμάρκετ και καταστήματα με είδη κουζίνας) που δεν αφήνει ίχνος νερού στα φύλλα.
Η συνταγή που σας δίνω είναι ίσως η αγαπημένη μου. Μπορεί καμιά φορά να προσθέσω και λίγο κοτόπουλο, αν έχω περισσευούμενο, ή λίγο τυρί, αλλά και όπως είναι μου κάνει μια χαρά.
Προσοχή: το αβοκάντο και τα μανιτάρια μαυρίζουν εύκολα, οπότε κόψτε τα την τελευταία στιγμή.
Salad with lettuce, avocado and fresh mushrooms
INGREDIENTS for 6 people
- 1 large Romaine lettuce (or a combination of green leaves such as spinach, curly lettuce etc.)
- 1 bunch lamb’s lettuce
- 1 large avocado peeled and cut into strips
- 1 small cucumber, cut into cubes
- 200gr fresh white mushrooms, sliced
- 1 large ripe tomato, de-seeded and cut into pieces
For the dressing
- 3 tbsp. olive oil
- juice form 1 lemon
- 2 tsp mild mustard
- 1 tsp. honey
- Salt-pepper
DIRECTIONS
- Wash the romaine lettuce thoroughly and cut it roughly with your hands.
- Place all ingredients in a salad bowl.
- Using a fork start whisking the olive oil with lemon, gradually add the mustards and honey, salt and pepper and continue whisking until you get a smooth, homogenous mix.
- Pour dressing gradually over the salad, mix well and taste. Add more dressing, mix and taste. You should have the leaves nbicely covered in dressing, but no dressing pool at the bottom of your bowl. Serve immediately.

Σαλάτα με μαρούλι, βαλεριανέλλα, μανιτάρια και αβοκάντο
ΥΛΙΚΑ για 6 άτομα
- 1 μεγάλο μαρούλι, ή συνδυασμός από πράσινα φύλλα (σπανάκι, λόλα ρόσα, αντίδια κλπ, ό,τι είναι της εποχής).
- 1 πακέτο βαλεριανέλλα (Η βαλεριανέλλα είναι ένα πολύ τρυφερό και κάπως λιπαρό φυλλαράκι που το βρίσκετε συσκευασμένο στα σούπερ μάρκετ (με το λανθασμένο όνομα «βαλεριάνα»).
- 1 ώριμο αβοκάντο, ξεφλουδισμένο και κομμένο σε λωρίδες
- 1 μικρό αγγούρι, κομμένο σε κύβους
- 200γρ μανιτάρια λευκά φρέσκα, κομμένα σε φέτες
- 1 ώριμη ντομάτα, κομμένη σε φέτες, χωρίς σπόρια
Για τη σάλτσα
- 3 κουτ. σούπας ελαιόλαδο
- Χυμό από ένα λεμόνι
- 2 κουτ. του γλυκού μουστάρδα
- 1 κουτ. γλυκού μέλι
- Αλάτι-πιπέρι
ΕΚΤΕΛΕΣΗ
- Πλύνετε καλά το μαρούλι και κόψτε το με τα χέρια σας σε χοντρά κομμάτια.
- Βάλτε όλα τα λαχανικά σε μια σαλατιέρα.
- Με ένα πιρούνι ανακατέψτε ζωηρά το λάδι με το λεμόνι, προσθέστε τη μουστάρδα και το μέλι, αλάτι και πιπέρι και συνεχίστε το ανακάτεμα μέχρι να αποκτήσετε μια κάπως παχύρρευστη σάλτσα.
- Περιχύστε τη σαλάτα με τη σάλτσα, ανακατέψτε με τις κουτάλες και σερβίρετε αμέσως.

A little lemon juice will also retard browning of the avocado.

i love avocado in my frech green salads – we have a lot of avocado trees in hania, and always get given them – they are great with lettuce
we were very lucky with the headmaster at the school – he was keen to see traditions kept, but next year he probably won’t be there any more. we will be losing a wonderful caring teacher.
Zoe always says that the avocado should have originated in Greece. Oh well, you have it now. 🙂
