I am a very big greens fan, especially wild greens. This time of year you see them everywhere in Greece, but the type called vrouves, which is a type of mustard green with bright yellow flowers, really stands out. The problem is that I don’t know how to pick them. That is, I didn’t know until now.
My mother came over to my house for coffee with two of her friends the other day and one of them is an expert on wild greens (and a fantastic cook). She was kind enough to show me how to pick the vrouves (which were growing in the communal garden and my terrace and I managed to fill a whole plastic bag with them!). The next day I enjoyed them lightly boiled as a salad with some olive oil and lemon juice. Needless to say that there is nothing better than picking your own food FOR FREE and eating it afterwards!

Είναι τρομερό να σου αρέσουν τα χόρτα και να μην έχεις κανένα να σου μάθει να μαζεύεις. Ειδικά όταν τα βλέπεις να έχουν καταλάβει τις ζαρντινιέρες σου όλες, τα διπλανά οικόπεδα και μέρος του κοινόχρηστου κήπου. Έλα όμως που η τύχη ήταν με το μέρος μου αυτή τη φορά. Όταν ήρθαν τις προάλλες για καφέ η μητέρα μου με δυο φιλενάδες της να δουν το σπίτι (όχι σχόλια παρακαλώ), η μία από τις δύο που είναι και κουμπάρα της μητέρας μου (και συγκλονιστική μαγείρισσα) άρχισε να μαζεύει βρούβες από τη ζαρντινιέρα μου! Μου έδειξε πώς να διαλέγω τα πιο τρυφερά κοτσάνια που έχουν μπουμπούκια, αλλά όχι λουλούδια ,και έτσι έπιασα δουλειά. Μάζεψα μια μεγάλη σακκούλα και άρχισα να σκέφτομαι τί να τις κάνω.
Τελικά τις έριξα για λίγο σε αλατισμένο νερό και τις έφαγα σαλάτα με λάδι και λεμόνι. Πρέπει να σας πως πως δεν υπάρχει μεγαλύτερη ικανοποίηση από το να τρως κάτι που α) το έχεις μαζεψει/φτιάξει ο ίδιος και β) είναι τζάμπα!
Υ.Γ. Σκέφτηκα πως με αυτήν τη συνταγή που έχει τόσο χαμηλό αποτύπωμα διοξειδίου του άνθρακα, μπορώ με τον τρόπο μου να συμμετάσχω κι εγώ στην Ωρα της Γης. I love greens this way. So fresh and delicious. I’m still trying to figure out if vrouves are broccoli rabe (rapini) or just closely related. I’ve always referred to broccoli rabe as vrouves when describing them to my in-laws in Athens!
Oh, I love greens too! Especially the way you’ve prepared this dish, just very simple and pure. You can really taste the flavor of the vegetable this way and I think it must be the most nutritious preparation. Here’s to gorgeous, fresh and healthy greens!! Thanks for sharing!!

we sometimes call them kapsanthous
and yes – they ARE related to broccoli
in fact, if you see an overgrown brocoli head in the garden, you will see the flowers look just like the buds in the mustard greens

Greek style «horta» are always delicious…especially when prepared with such simplicity. I can’t remember if I’ve tried these or not.
